Sometimes Eating Really is This Simple…

I don’t know about you, but as much as I love a good avocado, I didn’t weep salty tears of terror when recent talk of border closings meant we might have to live without them.

Avocados are tasty.  And really good for the body.  And not cheap.  When we buy one or two we should do our best to eat them up before they become wasted, smelly, grey matter.

It’s easy to spy a ripe avocado in the fridge and feel a little twitchy over the though of having to slice, dice, scoop, incorporate, stir, and serve in just the right dish, with just the right chips.  If that’s what keeps you closing the fridge door on that withering gem of goodness, then stop overthinking your food and haul that baby into daylight.

Today I spied a super-ripe avocado and figured I could just eat it for lunch, right?  Except… snoozer city.

Luckily, there were flavored crackers in the cabinet (OK, they were herb-y Triscuits) and a couple of useful jars of spice in the cabinet to give a kick to my not-guacamole. I had a delicious feast in no-time-flat!

1 Avocado
2 tsp. Taco Seasoning (or whatever seasoning you happen to have)
1 tsp. Garlic and Herb salt (or whatever herby-garlicy-salty combo you can find).
Crackers… or whatever you want to eat it with.

Smash the avocado into a bowl.  Add taco seasoning and your garlic-herb-salt combo.  Smash and stir till everything is well-blended.  Taste then add a touch of salt if needed.
Scoop up your avocado goodness with the crackers and feast away!

Easy, fast, delicious, and way to go not wasting pricey food!
